Sloppy Joe's Saloon and Spoon has had many names and many owners throughout its long history in beautiful downtown Hubertus, Wisconsin. Regardless of the era, the purpose of this historic Cream City brick building has remained exactly the same: a gathering place for the community.
Early records show that these grounds have served as a vital local hub since the turn of the 20th century, operating as a general store, a hotel, and a neighborhood saloon. The walls hold decades of memories: weekend chicken broasts, competitive games of Sheepshead, and stories of local children sent over with tin pails to fetch fresh beer for their families. Through the eras of the Goshel Tavern and Dance Hall and beyond, this property has been the backdrop to local parades, celebrations, and deep neighborhood connections.


In February 2003, Joe and Ellen Hennes purchased the historic property. Fueled by a passion to keep "Old-World Hubertus" thriving, they meticulously restored the structure. They uncovered original scrollwork beneath old siding, brought back time-period windows and stained glass, and built our famous German-style biergarten. Over 23 years of dedication, Joe and Ellen built more than a restaurant. They created a family-oriented landmark grounded in excellent food, fun, and laughter.
On June 1, 2026, a new chapter officially began at Sloppy Joe's as the Hennes family passed the ownership torch to Matt Prostek and his family.
The Prostek family, including Matt, Josh, Greg, and Colleen, brings deep Southeast Wisconsin roots and a shared commitment to community values. For decades, the Prosteks have been known across the region for their strong work ethic and entrepreneurial spirit, balancing local real estate expertise with strong family values. When looking for the right stewards to carry the saloon into the future, Joe and Ellen knew that Matt and his family shared the exact heart and soul required to protect this local treasure.
As the new owners, the Prostek family is dedicated to preserving everything that makes Sloppy Joe's an indispensable piece of Washington County.

While ownership has changed, our core identity remains untouched. The familiar faces, the community spirit, and the legendary recipes are not going anywhere. We are proud to continue serving up the local favorites you know and love:
